Mixed Bean Salad

Prep Time: 10 mins Serves: 4
Ingredients:
2 x 400-gram Mix Bean Salad Can
200 grams Sweet Corn Can
150 grams English Cucumber Finely Diced
½ Green Bell Pepper Finely Diced
½ Red Bell Pepper Finely Diced
½ Yellow Bell Pepper Finely Diced
2 tbsp Flat Leaf Parsley Finely Chopped
100 grams of Feta Cheese Crumbled
Method:
In a large bowl, mix everything, cover, and refrigerate for 2 hours.
Before serving, add the honey-lime vinaigrette, crumble the feta, and mix well.
Enjoy with your pizza, lasagna or on its own.
Honey Lime Vinaigrette
Ingredients:
¼ cup Olive Oil
2 tbsp Honey
1 Lime Zested
1 Juice of Lime
2 Cloves Garlic Minced
1 tsp Dijon Mustard
1 tsp Wholegrain Mustard
½ tsp Red Chilli Flakes
¼ tsp Ground Cumin
½ tsp Black Pepper
½ tsp Salt
Method:
Place all ingredients except wholegrain mustard and chilli flakes in a blender and blend until smooth.
Add the wholegrain mustard and chilli flakes, and blitz for 2-3 times.
Place in a jar and refrigerate for up to a week.
Enjoy the dressing with various salads!
