Red Cabbage Apple Salad

Preparation time: 10 Minutes Serves: 2


Ingredients:

½ head of Red Cabbage, Thinly Sliced

1 small Red Onion Thinly Sliced

1 large Carrot Thinly Sliced

1 Granny Smith Apple Core and Thinly Sliced

3 tbsp Flat-leaf Parsley Finely Chopped


Method:

  1. Combine the salad ingredients in a large bowl, then pour in the dressing and stir well until coated.


  • Serve immediately.

  • Add the dressing only once you are ready to serve this salad. That way, the cabbage stays fresh and crunchy.


Coleslaw Dressing


Ingredients:

¾ cup Vegan Mayo or Mayo

2 tbsp Apple Cider Vinegar

2 tbsp Maple Syrup

1 tsp Dijon Mustard

1 tsp Wholegrain Mustard

1 tsp Celery Seeds

½ tsp Black Pepper Freshly Ground

¼ tsp Salt


Method:

  • In a medium bowl, whisk all the ingredients until combined.

  • Place in a jar and refrigerate for up to a week.

  • Enjoy the dressing with various salads!
