Red Cabbage Apple Salad

Preparation time: 10 Minutes Serves: 2
Ingredients:
½ head of Red Cabbage, Thinly Sliced
1 small Red Onion Thinly Sliced
1 large Carrot Thinly Sliced
1 Granny Smith Apple Core and Thinly Sliced
3 tbsp Flat-leaf Parsley Finely Chopped
Method:
Combine the salad ingredients in a large bowl, then pour in the dressing and stir well until coated.
Serve immediately.
Add the dressing only once you are ready to serve this salad. That way, the cabbage stays fresh and crunchy.
Coleslaw Dressing
Ingredients:
¾ cup Vegan Mayo or Mayo
2 tbsp Apple Cider Vinegar
2 tbsp Maple Syrup
1 tsp Dijon Mustard
1 tsp Wholegrain Mustard
1 tsp Celery Seeds
½ tsp Black Pepper Freshly Ground
¼ tsp Salt
Method:
In a medium bowl, whisk all the ingredients until combined.
Place in a jar and refrigerate for up to a week.
Enjoy the dressing with various salads!
