Tadka Chaya Ni Katki Keri Nu Athanu

Ingredients:

1kg Raw Mango

1½ kg Sugar

½ tbsp Cumin Seeds

1 tbsp Red Chilli Powder

1 tbsp Turmeric Powder

2½ tbsp Salt


Method:

  1. Wash and peel the mangos, cut them into tiny cubes of about ½cm and place them in a saucepan. Add the turmeric and salt, mix well and keep for 3 hours.

  2. Drain the mangos and leave them for 5 minutes; put them back in the saucepan. Next, add the sugar and mix it well until the sugar has combined.

  3. Cover the saucepan with a cheesecloth and place a rubber band around it; keep it in a sunny and warm place for 6-8 days; open and stir the mangos twice a day; morning and evening, then cover and put it back.

  4. By now, the sugar will have thickened like a sauce; add the cumin seeds and chilli powder; mix well and leave it for a day.

  5. Transfer it into the glass jar and refrigerator.

  • Enjoy with Puris, Parathas and Theplas.

  • It will last up to a year.

NB:

In countries where the weather is too hot, it will take about 4-5 days.
