Strawberry Compote

Prep and Cooking time: 20 mins.
Ingredients:
200 grams Fresh Strawberries
½ Juice of Lime and Half Zested
1 tsp Cornstarch (Cornflour)
¼ cup Sugar
¼ cup Water
Method:
Stem and wash the strawberries, cut them into quarters and put them in a saucepan.
Combine the cornstarch with the water and pour it into the strawberries with the lime zest and sugar.
Stir all the ingredients together over medium-low heat and simmer on low heat for 10-12 minutes, until the sauce thickens, stirring occasionally.
Allow to cool, then transfer to a bowl or jar.
Store in the fridge in an airtight container and serve warm or cold.
NB:
Use immediately or store in a jar in the fridge for up to 1-2 weeks.
