Pav Bhaji

Preparation Time: 15 min. Cooking Time: 25 min. Serves 4


Ingredients:

4 Tomatoes Medium Size Finely Chopped

3 Onions Medium Size Finely Chopped

1 Green Capsicum Very Finely Chopped

½ Head of Cauliflower Chopped

2 Potatoes Small

2 Carrots Small

½ cup Green Frozen Peas

2 tbsp Ginger Paste

1½ tbsp Tomato Puree

1 tbsp Garlic Paste

2 tbsp Oil

2 tbsp Butter

1 tsp Cumin Seeds

¼ tsp Asafoetida (Hing)

1½ tsp Red Chilli Powder

½ tsp Turmeric Powder

Salt to taste


For Topping:

2 Red Onions Very Finely Chopped

1½ tbsp Coriander Finely Chopped

1 Lime Cut into Wedges


Method:

  1. Chop the cauliflower, potatoes and carrots into cubes. Next, steam the vegetables. Once steamed, mash the vegetables with a potato masher until it reaches a chunky texture.

  2. Heat oil and butter together in a pan over medium heat. Add cumin seeds, asafoetida and chopped onions, cook until the onions go brown.

  3. Now add the capsicum, ginger paste, garlic paste, red chilli powder, turmeric powder and pav bhaji masala powder and sauté for 2 minutes, then add the tomato puree, tomatoes and salt.

  4. Once the tomatoes are soft and runny, add the mashed vegetables. Mix well and let it cook for five minutes stirring occasionally. Add the frozen peas, and cook for a further 2 minutes.

  • Enjoy hot with the toppings, wedge of lime and bread rolls (Pav).


Preparing for Pav:

Spread the butter on both side of the rolls and grill until its light brown.
