Math Nu Shaak

Preparation Time: 10 min. Cooking Time: 25 min. Serves 4


Ingredients:

1 Cup Math (Turkish-Dew Beans)

5 Cloves Garlic Finely Chopped

1 tbsp Ginger Paste

¾ tbsp Green Chilli Paste

½ Juice of Lime

3 tbsp Oil

¾ tsp Cumin Seeds

¼ tsp Asafoetida (Hing)

¾ tsp Turmeric Powder

1½ tsp Coriander-Cumin Powder (Dhana Jiru)

½ tsp Jaggery (Gōr)

Salt to taste


Method:

  1. Wash and soak the math overnight with 3 cups of warm water. The next day wash with fresh water and drain, keep aside.

  2. Heat oil on medium heat; once hot, add cumin seeds until it crackles about 10 seconds, then add the asafoetida and chopped garlic.

  3. Sauté for 20 seconds, then add the math, ginger paste, green chilli paste, turmeric powder, jaggery and salt, add ¼ cup of water, mix well, cook on low heat with the lid on, stirring occasionally.

  4. See that it does not sit at the bottom; if you think you need to add water, add a little but keep the math dry.

  5. Once nearly cooked, add the coriander-cumin powder and lime juice, simmer for 2-3 minutes with the lid on, stirring occasionally.
