Preparation: 10 min. Serves 4

Ingredients:

2 Medium Tomatoes

½ cup Cucumber

1 Small Carrot

2 tbsp Coriander Leaves with Stalks

3 Green Chillies

1½ inch Ginger

4 Cloves Garlic

5 tbsp Tomato Ketchup

¾ tsp Red Chilli Powder

Salt to taste

Method:

  1. First, to prepare the ingredients, chop the tomato and cucumber into small cubes. Then finely chop the carrots, green chillies, and garlic. Finally, grate the ginger.

  2. Add all the ingredients to a blender, including the tomato ketchup, red chilli powder and salt. Blend in pulses to a grainy consistency. Avoid blending continuously as this can make the chutney too smooth and runny.

  3. Once you’re happy with the texture, transfer to a bowl and serve with hot Maru Bhajias!

NB:

  • Best served cold. Store in an airtight container in the refrigerator. It will last 4-5 days in the fridge.
