Ingredients:
28 Pani Puri
1½ cup Nylon Sev
2 Medium Boiled Potatoes Mashed
1 Lager Red Onion, Very Finely Chopped
1½ cup Chilled Yoghurt
½ tsp Roasted Cumin Powder
½ tsp Red Chilli Powder
½ tsp Chaat Masala
1½ tsp Sugar
¼ tsp Salt
½ cup Khajur Ambli ni Chutney
¼ cup Mint Water
2 tbsp Coriander Finely Chopped
¼ cup Pomegranate Seeds (when available)
Method:
Add the yoghurt into a bowl with the cumin powder, chilli powder, chaat masala, sugar, and salt, mix well, and set aside.
Take each puri and gently crack open the top with your index finger or thumb for stuffing.
Stuff it with potatoes and onion and sprinkle the sev over it.
Drizzle the khajur ambli chutney and mint water, then pour the yoghurt on top.
Sprinkle with some cumin powder, chilli powder, chaat masala, chopped coriander and pomegranate seeds.
Serve immediately and enjoy.
