Samosas Pinwheels

Preparation time: 20 Minutes, Cooking time: 30 Minutes, Serves 4-6


Ingredients:

1 Puff Pastry Ready-Rolled Sheet

2 cups Potatoes Finely Diced

1 cup Carrots Very Finely Diced

½ cup Onion Very Finely Diced

½ cup Frozen Peas

1 tsp Cumin Seeds

¼ tsp Asafoetida (Hing)

2 tbsp Ginger Paste

1 tbsp Green Chilli Paste

1½ tbsp Sugar

1 tsp Taj Laving Masala

½ tsp Garam Masala

1 Juice of Lime

4 tbsp Coriander Finely Chopped

3 tbsp Oil

1 tbsp Melted Butter

Salt to taste


Method:

  1. In a large pan, heat the oil and add the cumin seeds and asafoetida. Then add the diced potatoes, carrots, ginger paste, chilli paste, sugar and salt.

  2. Mix well, then cook on medium-low heat, stirring occasionally to prevent sticking.

  3. Once the potatoes and carrots are cooked, add the onions, peas, chopped coriander, lime juice, taj laving masala and garam masala.

  4. Mix well, simmer for 5 minutes, adjust the seasoning, and cool the filling.

  5. Lay out the puff pastry and spread the mixture, leaving a small edge for sealing.

  6. Roll pastry into a tight log, tucking in edges. Pinch seam to seal. Brush the edges with water for a secure seal, and refrigerate the rolled pastry for at least 1 hour before slicing.

  7. Preheat oven to 200°C (400°F), gas mark 6. Line a baking tray with parchment paper.

  8. Once chilled, brush the log with melted butter first, then cut it into ¾-inch slices and place them on a baking tray. Bake for 20-25 minutes until golden and puffed.


  • Serve warm as an appetiser.
