Rai Vara Marcha Nu Athanu (Green Chilli)

Ingredients:
100 grams Green Chillies
3½ tbsp Corn Oil
5 tbsp Split Mustard Seeds (Rai Na Kuria)
1 tbsp Fennel Seeds (Variyālī)
½ tbsp Coarse Black Pepper
1 tsp Turmeric Powder
¼ tsp Asafoetida (Hing)
1½ tbsp Lemon Juice
Salt to taste
Method:
Wash the green chillies clean and dry, split them lengthwise along one side, remove a few seeds from each, and set aside.
Add the split mustard, fennel seeds, black pepper, turmeric, asafoetida, salt, and oil to a bowl, mix well, and let it rest for 5 minutes for the masala to infuse into the oil.
Fill the chillies with the masala, cut them in half, transfer them to the glass jar, and refrigerate.
Enjoy with Puris, Parathas and Theplas.
