Matoke Nu Shaak

Ingredients:

5 Green Matoke (Raw Green Bananas)

1 Onion Medium Size Finely Chopped

½ cup Fresh Tomato Puree

1½ tbsp Ginger Paste

1½ tbsp Coriander Chopped

2 tbsp Oil

⅓ cup Crushed Peanuts

1 tsp Cumin Seeds

¼ tsp Asafoetida (Hing)

½ tsp Turmeric Powder

1½ tsp Chilli Powder

¼ tsp Coriander-Cumin Powder (Dhana Jiru)

¼ tsp Jaggery (Gōr)

Salt to taste


Method:

  1. Peel and slice the matoke into ½ cm thick discs in water so they don’t go black.

  2. Heat the oil on medium heat. Once hot, add the cumin seeds and asafoetida until they crackle. Then add the chopped onions and sauté until soft and translucent.

  3. Strain the matoke in a sieve, add it to the pan, add the tomato puree, ginger paste, turmeric powder, chilli powder, coriander-cumin powder, jaggery, salt and 1 cup of water, mix well and sauté for 2-3 minutes.

  4. Add the crushed peanuts and mix well, then simmer on low heat for 8-10 minutes, stirring occasionally, with the lid on.

  • Garnish with coriander leaves and enjoy with hot Parathas.
