Matoke Nu Shaak

Ingredients:
5 Green Matoke (Raw Green Bananas)
1 Onion Medium Size Finely Chopped
½ cups Fresh Tomato Puree
1½ tbsp Ginger Paste
1½ tbsp Coriander Chopped
2 tbsp Oil
⅓ cup Crushed Peanuts
1 tsp Cumin Seeds
¼ tsp Asafoetida (Hing)
½ tsp Turmeric Powder
1½ tsp Chilli Powder
¼ tsp Coriander-Cumin Powder (Dhana Jiru)
¼ tsp Jaggery (Gōr)
Salt to taste
Method:
Peel and slice the matoke in water, so they don’t go black, cut them into ½ cm thick disc.
Heat oil on medium heat, once hot add the cumin seeds and asafoetida until it crackles, then add the chopped onions and sauté until soft and translucent.
Strain the matoke in a sieve, add it to the pan, add the tomato puree, ginger paste, turmeric powder, chilli powder, coriander-cumin powder, jaggery, salt and 1 cup of water, mix well and sauté for 2-3 minutes.
Now add the crushed peanuts and mix well, simmer on a low heat for 8-10 minutes with the lid on stirring occasionally.
Garnish with coriander leaves and enjoy with hot Parathas.
