Potato Skins (Vegetarian)

Preparation and Cooking Time: 1 hour 30 min. Serves 4


Ingredients:

2 Large Jacket Potatoes

1 Onion Small Size Very Finely Chopped

½ Green Capsicum Very Finely Chopped

2 Spring Onions Very Finely Chopped

325 grams Hot Salsa (Ready Bottle)

½ tsp Red Chilli Powder

½ tsp Black Pepper

¼ tsp Salt

Cheddar Cheese



Method:

  1. Wash the potatoes, dry and oil them with olive oil. Place them on a baking tray.

  2. Preheat the oven to 180 degrees, gas mark 5 and bake for an hour.

  3. While the potatoes are baking, add the chopped onions, green capsicum, spring onions, hot salsa, red chilli powder, black pepper, and salt in a bowl. Mix well and keep aside.

  4. After an hour, remove the potatoes from the oven, cut them in half, scoop out some potato mash; pop the skins into a baking tray, and sprinkle some salt and black pepper.

  5. Take 3-4 tbsp of the salsa and 1 tbsp of butter, add it to the mashed potatoes, mix well.

  6. Put the mixture back into the skins and top it up with the rest of the salsa.

  • Grate some cheddar cheese on top and bake for 15 minutes.

  • Serve hot with sour cream and chive or guacamole.
