Vegetable Chow Mein

Preparation Time: 10 min. Cooking Time: 20 min. Serves 4


Ingredients:

250 grams Eggless Noodles or (Egg)

1 Onion Thinly Sliced

1 Carrot Cut into Thin Strips

100 grams Mangetout Halved (Snow Peas)

100 grams Baby Corn Halved

75 grams Bean Sprouts

1 tbsp Ginger Paste

4 tbsp Dark Soy Sauce

1½ tbsp Chilli Garlic Sauce

2 tbsp Rice Vinegar

1 tbsp Sesame Oil

1 tsp Sugar

1½ tsp Cornflour

Salt to taste

2 tbsp Oil


Method:

  1. Cook the noodles according to the instructions, drain them, and set aside.

  2. Mix the soy sauce, chilli garlic sauce, rice vinegar, sesame oil, sugar, and cornflour in a small bowl with 4 tbsp of water and set aside.

  3. In a wok, heat the oil on a high flame. Add the mangetout and baby corn and stir-fry for 2 minutes. Then add the onions, carrots, bean sprouts, ginger paste, ¼ tsp salt, and stir-fry for another 2 minutes.

  4. Add the noodles and mix, then add the sauce and mix well; cook for 2 minutes.

  • Enjoy hot.
