Vada Puri (for Kali Chaudas)

Prep Time: 10 minutes Cooking Time: 30 minutes Serves: 4


Ingredients:

1 cup Urad Flour (White Lentil Flour)

½ cup Wheat Flour

¼ cup Gram flour

½ tsp Turmeric Powder

¾ tsp Black Pepper

1 tbsp Green Chilli Paste

1½ tbsp Oil

½ tsp Salt


Method:

  1. Add the urad flour, wheat flour, gram flour, black pepper, green chilli paste, turmeric powder, salt, and oil to a large mixing bowl.

  2. Mix it all; knead into a firm and tight dough. Add water as needed.

  3. The dough should not be too dry and sticky; leave the dough to rest for ten minutes.

  4. Divide the dough into small balls, about 2½ cm.

  5. Dust the work surface with wheat flour and roll the dough into even circles about 7-8 cm, which is not too thick or thin.

  6. Meanwhile, heat the oil in a deep frying pan.

  7. Once the oil has become hot, add the puris and fry by pressing down gently to allow it to puff up.

  8. Once puffed, turn over and fry until the puri turns into a light golden brown.

    • Enjoy with batata nu shaak or on its own.
