Juggu Batata Ni Khichdi
Preparation Time: 10 min. Cooking Time: 25 min. Serves 4
4 Red Potatoes Medium Size
1 cup Roasted Peanuts Coarsely Ground
2 tbsp Coriander Leaves Finely Chopped
½ Juice of Lime
3 tbsp Oil
1 tsp Cumin Seeds
1 tbsp Ginger Paste
½ tsp Black Pepper
1 tsp Sugar
Salt to taste
Peel and cut the potatoes into small cubes about 1cm pieces, then wash and drain them.
Heat oil in a pan on medium heat, add the cumin seeds until they start to crackle, add the potatoes, ginger paste, black pepper, sugar and salt.
Add 1½ tbsp of water and cook on low heat cook until the potatoes are soft, stirring occasionally.
Add the ground peanuts and lime juice, mix well and simmer for 2-3 minutes.
Garnish with coriander leaves and serve hot.
