Preparation and Cooking time: 1 hour 35 Minutes: Serves 4
Ingredients:
1 Cup Basmati Rice
1 tbsp Cumin Seeds
¼ tsp asafoetida
2 Bayleaf
1 Red Chilli
4 Cloves
3 Green Cardamom Pods
2 Pieces of Cinnamon
1 tsp Ghee (Clarified Butter)
1 tsp Oil
½ tsp Salt
Method:
Wash and soak the rice for 1 hour in water and strain them in a sieve.
Heat the oil and ghee at a low heat. Add the bay leaf, red chilli, cloves, cardamom, cinnamon, and sauté for a minute. Then add the cumin seeds and asafoetida and sauté until they crackle.
Now add the rice sauté for a minute or two so that it is coated with the oil.
Add 2 cups of water and salt, stir the rice, and bring it to a boil. Then, simmer on low heat for 10-15 minutes with the lid on.
Make sure the rice is nice and fluffy, and serve warm.
