Farali Matoke Nu Shaak

Preparation Time: 10 min. Cooking Time: 25 min. Serves 4 Ingredients: 5 Green Matoke (Raw Green Plantains)

1 Tomato Finely Chopped

⅓ cup Fresh Tomato Puree

1½ tbsp Coriander Leaves Finely Chopped

¼ cup Crushed Peanuts

3 tbsp Oil

1 tsp Cumin Seeds

1 tbsp Ginger Paste

½ tbsp Green Chilli Paste

½ tsp Sugar

Salt to taste Method:

  1. Peel and slice the matoke in water so they don’t go black, and cut them into ½ cm thick discs.

  2. Heat oil in a pan; add the cumin seeds and tomato puree, and sauté for a minute.

  3. Drain the matoke and add to the pan with ginger paste, green chilli paste, sugar and salt; add a ⅓ cup of water and cook on low heat for 5 minutes, occasionally stirring.

  4. Add the chopped tomatoes and crushed peanuts, and cook for 8-10 minutes, occasionally stirring until the matoke has cooked.

  • Garnish with coriander leaves and enjoy on its own or hot Parathas!
