Achari Masala Powder
Prep and Cooking Time: 20 mins.
Ingredients:
3 tsp Coriander Seeds
3 tsp Cumin Seeds
2½ tsp Fennel Seeds (Variary/Saunf)
2 tsp Fenugreek Seeds (Methi)
1½ tsp Mustard Seeds (Rai)
1 tsp Kalonji Seeds (Nigella Seeds)
6 Dry Red Chillies, Stalks Removed
1 tsp Turmeric Powder
1½ tsp Kashmiri Chilli Powder
1 tsp Amchur (Dry Mango Powder)
½ tsp Hing (Asafoetida)
Method:
Heat the pan on a low flame; once warm, add the coriander seeds and roast for a minute.
Add the cumin seeds and roast for 30 seconds, then add the fennel seeds and roast for 2 more minutes, then remove on a plate.
Add the fenugreek seeds and roast for a minute, then add the mustard seeds and roast for 30 seconds, add the kalonji seeds and roast for two more minutes, then remove on a plate.
Roast the red chillies for two minutes, remove on a plate, then let cool.
Add all the roasted seeds with the turmeric powder, Kashmiri chilli powder, amchur and hing; grind to a fine powder.
Sift the powder, store it in a dry, airtight jar, and use as needed.
Your achari masala is ready!
